Yoghurt Cucumber Salad
Serves 4-6 |

| Jajukh is a delightfully refreshing salad of cool cucumbers, tangy madzoon
and a hint of fresh mint. |
Preparation

Wash and peel cucumbers.

Cut each into 4 or 8 lengthwise strips then slice very thin. Cut off seedy
part if seeds are too big.

Stir madzoon with spoon, add a little water if madzoon is too thick
-
Add the cucumber and a pinch of salt.

Blend all together and chill well.

Garnish with fresh mint leaves if desired.
