Tomato Soup with Bulghur

| This is a fresh tomato soup with chopped spinach and bulghur wheat. |

Ingredients |
| 2 Tablespoons | butter |
| 4 | ripe tomatoes, peeled, seeded and finely chopped |
| 1/2 cup | coarse(#3) bulghur
wheat |
| 4 cups | beef broth, boiling |
| | salt and pepper |
| 1/2 pound | fresh spinach, coarsely chopped |
| 1 clove | garlic, crushed |
| 2 Tablespoons | lemon juice |
| 2 teaspoons | dry mint |
Preparation

Melt butter over medium heat

Add tomatoes and cook 5 minutes, stirring and crushing

Add bulghur and cook 5 minutes, stirring

Add hot broth, salt and pepper, spinach and garlic

Bring to a boil, stirring. Cover and simmer 30 minutes

Add lemon juice and mint in the last 5 minutes
