Baked lamb and wheat casserole
350°F Oven

| Sini Kufta is easy to make and impressive to serve. A favorite for
buffets. |

Filling |
| 1 pound | fatty ground lamb or beef |
| 1 cup | sliced onions |
| 1/4 cup | chopped green pepper |
| 1/4 cup | chopped parsley |
| 1 teaspoon | crushed basil |
| 1 teaspoon | chopped mint |
| 1/2 teaspoon | ground cinnamon |
| pinch | red pepper |
| | salt, pepper to taste |

Keyma (outer layer) |
| 1 pound | lean ground lamb or beef |
| 1 cup | fine(#1) bulghur wheat |
| 1 | egg |
| | salt, pepper to taste |
| To Finish |
| 1/2 stick | butter |
| 1/2 cup | lamb or beef broth |
| 1 Tablespoon | tomato paste |
Preparation

Saute all filling ingredients frying pan.

Chill for 3-4. hours or until fat has hardened.

To make keyma, mix lean lamb, wheat, egg, salt and pepper. Knead keyma mixture well. (Keep hands moist with cold water to knead
well.)

Line casserole pan (9" x 13" x 2") with half of keyma mixture.

Spread chilled filling mixture over this.

Top with remaining half of keyma mixture.

Mix broth and tomato paste. Pour broth over all. Dab with butter.

Bake covered in 350°F oven for 45 minutes. Remove cover last 15 minutes.

Cut lengthwise and then on diagonals to make diamond shaped pieces.
