| This is the trade mark of Middle Eastern spices. The proportions,
and list of ingredients vary from region to region (or from spice shop to
spice shop), but the basic recipe is the same. Grind several servings at
one time and keep the mixture in the freezer. Use portions as you need
them. |

| 4 Tablespoons | ground allspice |
| 1 Tablespoon | ground black pepper |
|
1 Tablespoon | ground cinnamon |
|
1 Tablespoon | ground nutmeg |
|
1 teaspoon | ground cardamom |
|
1 teaspoon | ground cloves |
|
1 teaspoon | ground ginger |
|
1 teaspoon | ground dried rose petals

Preparation

Combine all ingredients, mix well. Grind with a spice grinder until fine.
Notes
To make a larger amount of spice, double, or triple the ingredients.
To keep spice fresh, keep in a closed container in freezer.
